Knead the dough ingredients, gradually adding water until the mixture becomes soft and elastic. Leave the dough to rest.
Finely chop the greens and mix them with the onion, herbs, cheese, and a splash of olive oil. Season with salt and pepper to taste.
Roll out the dough into very thin sheets. Place a portion of the filling in the centre and wrap into elongated rolls, folding them into the signature shuttle shape.
Pan-fry in hot olive oil until they are beautifully golden and crisp. Drain on absorbent kitchen paper and serve warm. They are ideally accompanied by a dollop of Greek yoghurt or a fresh squeeze of lemon.
