Boil the pasta in salted water and drain, keeping it hot. Transfer it immediately to a large platter or pot and drizzle with the olive oil.
Add the grated cheese and toss. Crack the eggs directly onto the hot pasta and stir quickly so that they cook lightly from the residual heat, creating a creamy texture.
Serve immediately with plenty of freshly ground black pepper.
