Preparation of almonds: Peel the almonds and pulse them in a food processor or use a mortar and pestle until you have a full teacup of crushed nuts.
Browning: Use approximately 3 tablespoons of the butter to sauté the almonds until they take on a nice colour.
Preparation of syrup: In a pot, combine the sugar, the remaining butter, and 2 glasses of water, allowing the mixture to come to the boil.
Preparation of nisestes: In the remaining half glass of water, add the nisestes and stir well until fully dissolved.
Binding of the sweet: At the moment the mixture in the pot is boiling, add the dissolved nisestes, the roasted almonds, and the lemon. Continue stirring persistently until the mixture thickens and sets well.
Shaping: Once the mixture has cooled sufficiently, shape small spheres (the size of a loukoumi) and roll them in icing sugar until evenly covered.
